California Grilled Veggie Sandwich Recipe

Ingredients:  

Main Ingredients

  • 1 Red bell pepper, sliced
  • 1 Zucchini, sliced
  • 1 Red onion, sliced
  • 4 slices Whole grain bread
  • 2 tbsp Olive oil
  • 1 cup Hummus
  • 1 cup Mixed greens

Instructions: 

  • 1. Preheat the grill to medium-high heat.
  • 2. Brush the sliced vegetables with olive oil and season with salt and pepper.
  • 3. Grill the vegetables for about 3-4 minutes on each side until they are tender and have grill marks.
  • 4. Toast the bread slices on the grill for about 1-2 minutes until they are lightly browned.
  • 5. Spread hummus on each slice of bread.
  • 6. Layer the grilled vegetables and mixed greens on two slices of bread and top with the remaining slices.
  • 7. Serve immediately and enjoy!

Notes:

Feel free to add your favorite veggies or a slice of cheese for extra flavor.
