Instructions:
Preheat oven to 375°F (190°C).
Roast the pork shoulder for 40 minutes or until fully cooked.
Mix carrots, daikon, rice vinegar, and sugar in a bowl. Let it sit for 15 minutes.
Spread mayonnaise on the baguettes.
Layer the roasted pork, pickled vegetables, cilantro, and jalapeños on the baguettes.
Drizzle with soy sauce and serve.
Notes:
For extra flavor, marinate the pork overnight.
