Ingredients:  

Main Ingredients

  • 1 lb pork shoulder thinly sliced
  • 4 baguettes split
  • 1 cup carrots julienned
  • 1 cup daikon radish julienned
  • 1/4 cup rice vinegar
  • 1 tbsp sugar
  • 1/2 cup mayonnaise
  • 1 tbsp soy sauce
  • 1 cup cilantro fresh
  • 2 jalapeños sliced

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Roast the pork shoulder for 40 minutes or until fully cooked.
  • Mix carrots, daikon, rice vinegar, and sugar in a bowl. Let it sit for 15 minutes.
  • Spread mayonnaise on the baguettes.
  • Layer the roasted pork, pickled vegetables, cilantro, and jalapeños on the baguettes.
  • Drizzle with soy sauce and serve.

Notes:

For extra flavor, marinate the pork overnight.
