Ingredients:  

Main Ingredients

  • 2 cups cooked rice preferably day-old
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 0.5 cup frozen peas
  • 2 eggs beaten
  • 2 green onions chopped
  • Salt and pepper to taste

Instructions: 

  • Heat oil in a pan over medium heat.
  • Add onion and garlic, sauté until fragrant.
  • Add carrot and peas, cook until tender.
  • Push veggies to the side, pour in beaten eggs, scramble until cooked.
  • Add rice, soy sauce, salt, and pepper. Stir well.
  • Cook for a few minutes until heated through.
  • Garnish with green onions.

Notes:

Use day-old rice for best results.
