Instructions:
Scoop the ice cream into 4 balls and freeze until firm.
In a bowl, mix the crushed cornflakes and cinnamon.
Roll the ice cream balls in the cornflake mixture, then dip in the beaten eggs, and roll again in the cornflake mixture. Freeze until firm.
Heat the oil in a deep fryer. Fry the ice cream balls for a few seconds until golden brown. Serve immediately.
Notes:
Make sure the ice cream is very firm before frying to prevent it from melting too quickly.
