Instructions:
In a mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, and peppermint extract until the sugar is dissolved.
Add the green food coloring if using, and mix until well combined.
Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions.
In the last few minutes of churning, add the mini chocolate chips.
Transfer the ice cream to a container and freeze for at least 4 hours before serving.
Notes:
For a stronger mint flavor, you can add more peppermint extract. Adjust the amount of chocolate chips to your preference.
