Instructions:
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a medium saucepan, combine butter and water. Bring to a boil.
Remove from heat and stir in flour until mixture forms a ball.
Beat in eggs one at a time until smooth.
Transfer dough to a piping bag and pipe 4-inch strips onto the baking sheet.
Bake for 20-25 minutes or until golden brown. Let cool.
For the filling, whip heavy cream with sugar and vanilla until stiff peaks form.
For the glaze, heat chocolate chips and heavy cream until smooth.
Cut cooled eclairs in half and fill with cream. Dip tops in chocolate glaze.
Notes:
Best enjoyed fresh. Store in the fridge for up to 2 days.
