Equipment

  • Baking Sheet
  • Piping bag
  • Mixing bowl

Ingredients:  

Choux Pastry

  • 1/2 cup Butter
  • 1 cup Water
  • 1 cup All-purpose flour
  • 4 Eggs

Cream Filling

  • 2 cups Heavy cream
  • 1/4 cup Sugar
  • 1 tsp Vanilla extract

Chocolate Glaze

  • 1 cup Chocolate chips
  • 1/2 cup Heavy cream

Instructions: 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a medium saucepan, combine butter and water. Bring to a boil.
  • Remove from heat and stir in flour until mixture forms a ball.
  • Beat in eggs one at a time until smooth.
  • Transfer dough to a piping bag and pipe 4-inch strips onto the baking sheet.
  • Bake for 20-25 minutes or until golden brown. Let cool.
  • For the filling, whip heavy cream with sugar and vanilla until stiff peaks form.
  • For the glaze, heat chocolate chips and heavy cream until smooth.
  • Cut cooled eclairs in half and fill with cream. Dip tops in chocolate glaze.

Notes:

Best enjoyed fresh. Store in the fridge for up to 2 days.
