Ingredients:  

Filling

  • 4 cups rhubarb, chopped
  • 1 cup sugar
  • 2 tbsp flour

Topping

  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 1 cup flour

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine rhubarb, sugar, and 2 tbsp flour. Spread evenly in a baking dish.
  • In another bowl, mix rolled oats, brown sugar, melted butter, and 1 cup flour. Sprinkle over rhubarb mixture.
  • Bake for 45 minutes or until the topping is golden brown and the filling is bubbly.

Notes:

Serve warm with a scoop of vanilla ice cream for an extra treat.
