Instructions:
1. Preheat oven to 375°F (190°C).
2. In a mixing bowl, combine ground beef, chopped onion, olive oil, salt, and black pepper.
3. Lay out a sheet of phyllo dough and brush with melted butter. Place another sheet on top and brush with butter again.
4. Spread a portion of the meat mixture along one edge of the phyllo dough and roll it up tightly.
5. Place the rolled dough on a baking tray and repeat with the remaining dough and filling.
6. Brush the tops of the rolls with more melted butter.
7. Bake in the preheated oven for 45 minutes, or until golden brown and crispy.
8. Let cool slightly before serving.
Notes:
For a vegetarian version, you can use a cheese filling instead of meat.
