1. Heat a large pot over medium heat. Add a bit of oil and brown the pork chops on both sides. Remove and set aside.
2. In the same pot, add the chopped onion and minced garlic. Sauté until softened.
3. Pour in the chicken broth and bring to a boil.
4. Add the diced potatoes, sliced carrots, and chopped celery. Return the pork chops to the pot.
5. Season with salt, black pepper, and dried thyme. Reduce heat and let simmer for about 30 minutes, or until vegetables are tender and pork is cooked through.
6. Remove pork chops, shred the meat, and return to the soup. Serve hot.
