Ingredients:  

Main Ingredients

  • 4 pork chops
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups potatoes diced
  • 2 cups carrots sliced
  • 1 cup celery chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme dried

Instructions: 

  • 1. Heat a large pot over medium heat. Add a bit of oil and brown the pork chops on both sides. Remove and set aside.
  • 2. In the same pot, add the chopped onion and minced garlic. Sauté until softened.
  • 3. Pour in the chicken broth and bring to a boil.
  • 4. Add the diced potatoes, sliced carrots, and chopped celery. Return the pork chops to the pot.
  • 5. Season with salt, black pepper, and dried thyme. Reduce heat and let simmer for about 30 minutes, or until vegetables are tender and pork is cooked through.
  • 6. Remove pork chops, shred the meat, and return to the soup. Serve hot.

Notes:

Feel free to add other vegetables like peas or corn for extra flavor.
