White Bean Chicken Chili Recipe

Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb chicken breast, diced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • 1 cup corn optional
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  • Add the diced chicken and cook until browned.
  • Stir in the white beans, chicken broth, cumin, oregano, and chili powder. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • If using, add the corn and cook for an additional 5 minutes. Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes:

This chili is great for meal prep and can be stored in the fridge for up to 3 days.
