Ingredients:

garlic, minced

chicken breast, diced

white beans, drained and rinsed

chicken broth

cumin

oregano

chili powder

corn
optional
to taste
salt and pepper
Instructions:
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
Add the diced chicken and cook until browned.
Stir in the white beans, chicken broth, cumin, oregano, and chili powder. Bring to a boil, then reduce heat and simmer for 20 minutes.
If using, add the corn and cook for an additional 5 minutes. Season with salt and pepper to taste.
Serve hot and enjoy!

This chili is great for meal prep and can be stored in the fridge for up to 3 days.
