Ingredients:

leftover or freshly made

all-purpose flour

beaten

butter
for frying
Instructions:
In a mixing bowl, combine mashed potatoes, flour, beaten egg, milk, salt, and pepper. Mix well until all ingredients are fully incorporated.
Heat butter in a frying pan over medium heat.
Scoop about 1/4 cup of the potato mixture and drop it into the pan. Flatten slightly with a spatula.
Cook each side for about 3-4 minutes or until golden brown and crispy.
Remove from pan and drain on paper towels. Serve hot.
Notes:
These potato cakes are great as a side dish or even a snack. You can add chopped onions or herbs for extra flavor.
