Ingredients:  

Main Ingredients

  • 1 cup Rice
  • 1 can Black Beans drained and rinsed
  • 1 tbsp Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 cup Vegetable Broth
  • 1 Lime juiced
  • 2 tbsp Cilantro chopped

Instructions: 

  • 1. Cook the rice according to package instructions.
  • 2. In a frying pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  • 3. Add the minced garlic and cook for another minute.
  • 4. Stir in the cumin and salt, then add the black beans and vegetable broth. Simmer for 10 minutes.
  • 5. Mix in the cooked rice, lime juice, and chopped cilantro. Serve warm.

Notes:

Feel free to add more spices or vegetables to suit your taste.
