Dressing Ingredients

bacon drippings

red wine vinegar

Instructions:
Cook bacon in a skillet over medium heat until crispy. Remove bacon and set aside, reserving the drippings.
In a mixing bowl, whisk together bacon drippings, red wine vinegar, Dijon mustard, sugar, and black pepper.
In a large bowl, combine spinach, red onion, and mushrooms. Pour warm dressing over the salad and toss to coat.
Top with cooked bacon pieces and serve immediately.
Notes:
For a vegetarian version, omit the bacon and use olive oil instead of bacon drippings.
