Ingredients:  

Salad Ingredients

  • 8 cups fresh spinach
  • 4 slices bacon chopped
  • 1/4 cup red onion thinly sliced
  • 1/4 cup sliced mushrooms

Dressing Ingredients

  • 3 tablespoons bacon drippings
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1/8 teaspoon black pepper

Instructions: 

  • Cook bacon in a skillet over medium heat until crispy. Remove bacon and set aside, reserving the drippings.
  • In a mixing bowl, whisk together bacon drippings, red wine vinegar, Dijon mustard, sugar, and black pepper.
  • In a large bowl, combine spinach, red onion, and mushrooms. Pour warm dressing over the salad and toss to coat.
  • Top with cooked bacon pieces and serve immediately.

Notes:

For a vegetarian version, omit the bacon and use olive oil instead of bacon drippings.
