Instructions:
1. Preheat the grill to medium-high heat.
2. Grill the corn for about 10 minutes, turning occasionally, until charred.
3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a mixing bowl.
4. Add the mayonnaise, Cotija cheese, chili powder, lime juice, cilantro, and salt to the bowl. Mix well.
5. Serve immediately or refrigerate until ready to serve.
Notes:
This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
