Ingredients:  

Main Ingredients

  • 4 ears Corn husked
  • 1/4 cup Mayonnaise
  • 1/4 cup Cotija Cheese crumbled
  • 1 tbsp Chili Powder
  • 1 tbsp Lime Juice fresh
  • 1/4 cup Cilantro chopped
  • 1 pinch Salt to taste

Instructions: 

  • 1. Preheat the grill to medium-high heat.
  • 2. Grill the corn for about 10 minutes, turning occasionally, until charred.
  • 3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a mixing bowl.
  • 4. Add the mayonnaise, Cotija cheese, chili powder, lime juice, cilantro, and salt to the bowl. Mix well.
  • 5. Serve immediately or refrigerate until ready to serve.

Notes:

This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
