pearl couscous

Instructions:
1. Cook the pearl couscous according to the package instructions. Drain and let it cool.
2. In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
3. Drizzle with olive oil and lemon juice. Season with salt and black pepper.
4. Toss everything together until well combined. Serve chilled or at room temperature.
Notes:
This salad can be made ahead and stored in the fridge for up to 2 days.
