Ingredients:  

Main Ingredients

  • 1 cup pearl couscous uncooked
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground

Instructions: 

  • 1. Cook the pearl couscous according to the package instructions. Drain and let it cool.
  • 2. In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
  • 3. Drizzle with olive oil and lemon juice. Season with salt and black pepper.
  • 4. Toss everything together until well combined. Serve chilled or at room temperature.

Notes:

This salad can be made ahead and stored in the fridge for up to 2 days.
