Ingredients:  

Main Ingredients

  • 1 cup red lentils rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 handful fresh cilantro chopped, for garnish

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic and ginger, cooking for another minute.
  • 4. Add the curry powder, ground cumin, and ground turmeric, stirring to combine.
  • 5. Pour in the diced tomatoes and vegetable broth, then add the rinsed red lentils.
  • 6. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender.
  • 7. Stir in the coconut milk, salt, and black pepper. Simmer for another 5 minutes.
  • 8. Serve hot, garnished with fresh cilantro.

Notes:

This red lentil curry is perfect served over rice or with naan bread.
