Ingredients:  

Main Ingredients

  • 2 cups Rice
  • 1 lb Chicken Breast cut into bite-sized pieces
  • 2 tbsp Olive Oil
  • 1 cup Chicken Broth
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 cup Frozen Peas

Instructions: 

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken pieces and cook until browned.
  • Add rice, chicken broth, salt, and pepper. Stir well.
  • Bring to a boil, then reduce heat to low and cover. Cook for 20 minutes.
  • Add frozen peas and cook for an additional 5 minutes.
  • Fluff rice with a fork and serve hot.

Notes:

Feel free to add other vegetables like carrots or bell peppers.
