In a mixing bowl, combine the oats and milk. Let sit for 5 minutes.
Add the flour, sugar, baking powder, baking soda, and salt to the oat mixture. Stir to combine.
In a separate bowl, whisk together the egg and melted butter. Add to the oat mixture and stir until just combined.
Heat a frying pan over medium heat and lightly grease with butter or oil. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve warm with your favorite toppings.
