Ingredients:

  • 4 large potatoes
  • 1 onion
  • 6 eggs
  • Olive oil
  • Salt

Instructions: 

  • Peel and thinly slice the potatoes and onion.
  • Heat olive oil in a pan and fry the potatoes and onion until soft.
  • Beat the eggs in a bowl and season with salt.
  • Add the fried potatoes and onion to the eggs and mix well.
  • Pour the mixture back into the pan and cook on low heat until the eggs are set.
  • Flip the omelet and cook the other side until golden brown.
