Instructions:
In a large mixing bowl, combine warm milk, melted butter, sugar, and yeast. Let it sit for 5 minutes until frothy.
Add mashed potatoes, salt, and 2 cups of flour. Mix until smooth.
Gradually add remaining flour until a soft dough forms. Knead for about 10 minutes.
Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Preheat oven to 375°F (190°C). Punch down dough and divide into 12 equal pieces. Shape into rolls and place on a greased baking sheet.
Cover and let rise for another 30 minutes.
Bake for 20-25 minutes or until golden brown. Serve warm.
Notes:
These rolls are great for dinner or as a snack. You can also freeze them for later.
