Ingredients:  

Main Ingredients

  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Cherry tomatoes halved
  • 1 Red bell pepper diced
  • 1 Green bell pepper diced
  • 1 Red onion diced
  • 1/4 cup Cilantro chopped
  • 1/4 cup Olive oil
  • 1/4 cup Red wine vinegar
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • In a large mixing bowl, combine black beans, corn, cherry tomatoes, red bell pepper, green bell pepper, and red onion.
  • Add chopped cilantro, olive oil, red wine vinegar, salt, and black pepper. Stir well to combine.
  • Serve immediately or refrigerate for an hour to let the flavors meld together.

Notes:

Feel free to add diced avocado or jalapeños for extra flavor.
