Instructions:
1. Slice the zucchini into rounds.
2. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.
3. Dredge each zucchini slice in flour, then dip in egg, and coat with breadcrumbs.
4. Heat oil in a frying pan over medium heat.
5. Fry zucchini slices until golden brown, about 2-3 minutes per side.
6. Remove and drain on paper towels. Serve warm.
Notes:
Best served immediately while crispy.
