queso fresco or mozzarella
Instructions:
In a mixing bowl, combine masa harina and water. Mix until a dough forms.
Divide the dough into 8 equal portions and roll into balls.
Flatten each ball into a disc, place a spoonful of beans and cheese in the center, and fold the edges over to seal.
Flatten the filled dough gently to form a thick disc.
Heat a griddle over medium heat and cook each pupusa for about 3-4 minutes on each side until golden brown.
Notes:
Serve with curtido (pickled cabbage slaw) and salsa roja.
