Equipment

  • Griddle
  • Mixing bowl

Ingredients:  

Dough

  • 2 cups masa harina corn flour
  • 1.5 cups water

Filling

  • 1 cup refried beans
  • 1 cup shredded cheese queso fresco or mozzarella

Instructions: 

  • In a mixing bowl, combine masa harina and water. Mix until a dough forms.
  • Divide the dough into 8 equal portions and roll into balls.
  • Flatten each ball into a disc, place a spoonful of beans and cheese in the center, and fold the edges over to seal.
  • Flatten the filled dough gently to form a thick disc.
  • Heat a griddle over medium heat and cook each pupusa for about 3-4 minutes on each side until golden brown.

Notes:

Serve with curtido (pickled cabbage slaw) and salsa roja.
