Ingredients:  

Main Ingredients

  • 1 lb shrimp, cooked and peeled
  • 1 cup tomato juice
  • 1/2 cup ketchup
  • 1/4 cup lime juice
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 1 jalapeño, seeded and chopped
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions: 

  • In a large bowl, combine tomato juice, ketchup, lime juice, cilantro, red onion, and jalapeño.
  • Add the cooked shrimp and avocado. Stir gently to combine.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes:

Best served chilled. Adjust the spice level by adding more or less jalapeño.
