Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 6 cups chicken broth
  • 2 limes, juiced
  • 2 chicken breasts, cooked and shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 avocado, sliced (for garnish)
  • 1 lime, sliced (for garnish)

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add chopped onion, garlic, and bell pepper. Cook until softened.
  • Add chicken broth and bring to a boil.
  • Reduce heat and add lime juice, shredded chicken, salt, and pepper. Simmer for 15 minutes.
  • Serve hot, garnished with avocado and lime slices.

Notes:

For a spicier version, add a chopped jalapeño with the bell pepper.
