Instructions:
Heat olive oil in a pot over medium heat.
Add chopped onion, garlic, and bell pepper. Cook until softened.
Add chicken broth and bring to a boil.
Reduce heat and add lime juice, shredded chicken, salt, and pepper. Simmer for 15 minutes.
Serve hot, garnished with avocado and lime slices.
Notes:
For a spicier version, add a chopped jalapeño with the bell pepper.
