Ingredients:

beef bones
preferably with some meat on them

onion
quartered

carrots
chopped
2
stalks
celery
chopped

cloves
garlic
crushed

tbsp
black peppercorns

water
Instructions:
1. Preheat oven to 400°F (200°C).
2. Place beef bones on a baking sheet and roast for 30 minutes.
3. Transfer roasted bones to a large pot. Add onion, carrots, celery, garlic, peppercorns, bay leaves, and water.
4. Bring to a boil, then reduce heat and simmer for 4 hours.
5. Strain the stock through a fine-mesh strainer. Discard solids.
6. Let the stock cool, then refrigerate or freeze for later use.
Notes:
This stock can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
