Instructions:
Heat olive oil in a large pot over medium heat.
Add diced onions, carrots, and celery. Cook until softened.
Add minced garlic and cook for another minute.
Add cubed chicken breast and cook until no longer pink.
Pour in chicken broth and bring to a boil.
Add orzo and cook until tender, about 8-10 minutes.
Stir in lemon juice, zest, salt, and pepper to taste.
Garnish with fresh parsley before serving.
Notes:
This soup is great for meal prep and can be stored in the fridge for up to 3 days.
