Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast cubed
  • 1 cup Orzo
  • 6 cups Chicken Broth
  • 2 Carrots diced
  • 2 stalks Celery diced
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 Lemon juiced and zested
  • 2 tbsp Olive Oil
  • to taste Salt and Pepper
  • 1/4 cup Fresh Parsley chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions, carrots, and celery. Cook until softened.
  • Add minced garlic and cook for another minute.
  • Add cubed chicken breast and cook until no longer pink.
  • Pour in chicken broth and bring to a boil.
  • Add orzo and cook until tender, about 8-10 minutes.
  • Stir in lemon juice, zest, salt, and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes:

This soup is great for meal prep and can be stored in the fridge for up to 3 days.
