Ingredients:  

Soup Ingredients

  • 1 large onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups potatoes peeled and diced
  • 1 cup heavy cream
  • 2 tbsp butter
  • to taste salt and pepper

Dumpling Ingredients

  • 1 cup flour
  • 1 large egg beaten
  • 1/4 cup milk
  • 1/2 tsp salt

Instructions: 

  • 1. In a large pot, melt butter over medium heat. Add diced onion and minced garlic, cook until softened.
  • 2. Add chicken broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • 3. While the soup is simmering, prepare the dumplings. In a mixing bowl, combine flour, beaten egg, milk, and salt. Mix until a dough forms.
  • 4. Drop small spoonfuls of the dough into the simmering soup. Cook until dumplings float to the top and are cooked through.
  • 5. Stir in heavy cream and season with salt and pepper to taste. Serve hot.

Notes:

This soup is perfect for a cold day. You can add some cooked chicken or ham for extra protein.
