Ingredients:  

Main Ingredients

  • 2 cups cooked black-eyed peas
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions: 

  • 1. In a large mixing bowl, combine the black-eyed peas, cherry tomatoes, cucumber, red onion, and parsley.
  • 2. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, salt, and black pepper.
  • 3. Pour the dressing over the salad and toss to coat evenly.
  • 4. Let the salad marinate in the refrigerator for at least 30 minutes before serving.

Notes:

This salad is best served chilled and can be made a day ahead.
