Ingredients:  

Main Ingredients

  • 2 pounds red potatoes cut into bite-sized pieces
  • 1/2 cup mayonnaise
  • 1/4 cup dill pickle relish
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon yellow mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 units hard-boiled eggs chopped
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion

Instructions: 

  • 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  • 2. In a large mixing bowl, combine the mayonnaise, dill pickle relish, fresh dill, yellow mustard, salt, and black pepper.
  • 3. Add the cooled potatoes, chopped eggs, celery, and red onion to the bowl. Gently mix until everything is well coated.
  • 4. Chill in the refrigerator for at least 1 hour before serving.

Notes:

For extra flavor, let the salad sit overnight in the fridge.
