Ingredients:  

Main Ingredients

  • 8 oz Pasta Use your favorite type of pasta
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Diced
  • 1/4 cup Red Onion Finely chopped
  • 1/4 cup Olives Sliced
  • 1/4 cup Vegan Feta Cheese Crumbled

Dressing

  • 3 tbsp Olive Oil
  • 2 tbsp Lemon Juice Freshly squeezed
  • 1 tsp Dijon Mustard
  • 1 clove Garlic Minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • 1. Cook the pasta according to the package instructions. Drain and rinse with cold water.
  • 2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and vegan feta cheese.
  • 3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
  • 4. Pour the dressing over the pasta salad and toss to combine.
  • 5. Chill in the refrigerator for at least 30 minutes before serving.
