Instructions:
1. Cook the pasta according to the package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and vegan feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
4. Pour the dressing over the pasta salad and toss to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.
