Ingredients:  

Main Ingredients

  • 1 cup dates, chopped
  • 1 cup boiling water
  • 1 cup sugar
  • 1 tbsp butter softened
  • 1 unit egg beaten
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped nuts walnuts or pecans

Instructions: 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • In a bowl, combine chopped dates and boiling water. Let sit for 10 minutes.
  • In another bowl, cream together sugar and butter. Add beaten egg and vanilla extract.
  • Stir in the date mixture.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
  • Fold in chopped nuts.
  • Pour batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes:

Store in an airtight container for up to a week.
