Instructions:
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, combine chopped dates and boiling water. Let sit for 10 minutes.
In another bowl, cream together sugar and butter. Add beaten egg and vanilla extract.
Stir in the date mixture.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
Fold in chopped nuts.
Pour batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes:
Store in an airtight container for up to a week.
