Ingredients:  

Main Ingredients

  • 4 cups leeks, cleaned and chopped
  • 2 cups potatoes, peeled and diced
  • 4 cups chicken stock
  • 1 cup heavy cream
  • to taste salt
  • to taste white pepper

Instructions: 

  • 1. In a pot, cook leeks in butter over medium heat until soft.
  • 2. Add potatoes and chicken stock. Bring to a boil, then simmer until potatoes are tender.
  • 3. Puree the soup in a blender until smooth.
  • 4. Stir in the cream, then season with salt and white pepper to taste. Chill before serving.

Notes:

Serve cold, garnished with chives if desired.
