Ingredients:  

Main Ingredients

  • 2 bunches Fresh Asparagus trimmed and cut into 1-inch pieces
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • 1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  • 2. Add the asparagus pieces and chicken broth. Bring to a boil, then reduce heat and let it simmer for about 20 minutes until the asparagus is tender.
  • 3. Use a blender to puree the soup until smooth. Return the soup to the pot.
  • 4. Stir in the heavy cream and season with salt and black pepper to taste. Heat through but do not boil.
  • 5. Serve hot and enjoy!

Notes:

This soup is great with a side of crusty bread.
