onion, chopped

garlic, minced

carrots, diced
2
celery stalks, diced

diced tomatoes

vegetable broth

kidney beans, drained and rinsed

cannellini beans, drained and rinsed

green beans, chopped

cup
zucchini, diced
1
tsp
dried oregano
1
tsp
dried basil
to taste
salt and pepper

spinach, chopped
1
cup
small pasta (like ditalini)
Instructions:
Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
Add carrots and celery, cook for another 5 minutes.
Stir in diced tomatoes and vegetable broth. Bring to a boil.
Add beans, green beans, zucchini, oregano, and basil. Season with salt and pepper. Simmer for 20 minutes.
Add spinach and pasta. Cook until pasta is tender, about 10 minutes. Serve hot.
Notes:
Feel free to add any seasonal vegetables you like.
