Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • to taste salt and pepper
  • 2 cups spinach, chopped
  • 1 cup small pasta (like ditalini)

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  • Add carrots and celery, cook for another 5 minutes.
  • Stir in diced tomatoes and vegetable broth. Bring to a boil.
  • Add beans, green beans, zucchini, oregano, and basil. Season with salt and pepper. Simmer for 20 minutes.
  • Add spinach and pasta. Cook until pasta is tender, about 10 minutes. Serve hot.

Notes:

Feel free to add any seasonal vegetables you like.
