Ingredients:  

Main Ingredients

  • 1 large Potato Russet or similar
  • 1 tsp Olive oil optional
  • to taste Salt
  • to taste Pepper

Instructions: 

  • 1. Wash the potato thoroughly and pat it dry.
  • 2. Pierce the potato several times with a fork.
  • 3. Rub the potato with olive oil, if using, and sprinkle with salt and pepper.
  • 4. Place the potato on a microwave-safe plate.
  • 5. Microwave on high for 5 minutes. Turn the potato over and microwave for an additional 5 minutes. If the potato isn't tender, continue microwaving in 1-minute increments until done.
  • 6. Let the potato rest for a minute before serving.

Notes:

For a crispy skin, you can place the microwaved potato in a preheated oven at 400°F for 5-10 minutes.
