Ingredients:  

Main Ingredients

  • 6 medium Russet Potatoes peeled and cubed
  • 1 cup Sour Cream
  • 1 cup Cheddar Cheese shredded
  • 1/2 cup Green Onions chopped
  • 1/2 cup Bacon cooked and crumbled
  • 1/2 cup Mayonnaise
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  • 2. In a large mixing bowl, combine sour cream, mayonnaise, salt, and black pepper.
  • 3. Add the cooled potatoes, cheddar cheese, green onions, and bacon to the bowl. Mix gently to combine.
  • 4. Chill in the refrigerator for at least 1 hour before serving.

Notes:

This salad is best served cold and can be made a day ahead.
