Ingredients:  

Main Ingredients

  • 2 tbsp Olive oil
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Onion, sliced
  • 2 cups Cooked chicken, sliced
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 4 Large flour tortillas
  • 2 cups Shredded cheese

Instructions: 

  • Heat 1 tbsp olive oil in a skillet over medium heat.
  • Add bell peppers and onion, cook until soft.
  • Add cooked chicken, chili powder, cumin, and garlic powder. Stir well.
  • Remove mixture from skillet and set aside.
  • Heat remaining olive oil in skillet. Place one tortilla in the skillet.
  • Sprinkle cheese over tortilla, add a portion of the chicken mixture, and top with more cheese.
  • Top with another tortilla. Cook until golden brown, then flip and cook the other side.
  • Repeat with remaining tortillas and filling.
  • Cut into wedges and serve warm.

Notes:

Feel free to add your favorite toppings like sour cream, guacamole, or salsa.
