1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.
2. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
3. Add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
4. Add mixed vegetables and cook for a few minutes until they are slightly tender.
5. Add turmeric powder, garam masala, and salt. Mix well.
6. Add the soaked and drained rice. Stir gently to combine with the vegetables and spices.
7. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
8. Turn off the heat and let the rice sit covered for another 5 minutes. Fluff the rice with a fork.
9. Garnish with chopped cilantro and serve hot.

Feel free to add any other vegetables you like. This recipe is very versatile.
