Ingredients:  

Main Ingredients

  • 4 Bolillo rolls
  • 2 cups Shredded chicken
  • 1 Avocado, sliced
  • 1 cup Refried beans
  • 1 cup Shredded lettuce
  • 1 Tomato, sliced
  • 1/2 cup Queso fresco
  • to taste Salt and pepper

Instructions: 

  • 1. Slice the bolillo rolls in half and toast them lightly on a skillet.
  • 2. Spread a layer of refried beans on the bottom half of each roll.
  • 3. Add shredded chicken, avocado slices, shredded lettuce, tomato slices, and queso fresco.
  • 4. Season with salt and pepper to taste.
  • 5. Place the top half of the roll on the sandwich and serve immediately.

Notes:

Feel free to add jalapeños or pickled onions for extra flavor.
