Ingredients:  

Main Ingredients

  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped

Instructions: 

  • Rinse quinoa under cold water.
  • In a saucepan, bring chicken broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  • In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  • Add diced chicken to the skillet, season with salt and pepper, and cook until browned.
  • Mix in cherry tomatoes and spinach, cook until spinach is wilted.
  • Combine cooked quinoa with the chicken mixture, stir well.
  • Serve warm and enjoy!

Notes:

This quinoa chicken recipe is great for meal prep and can be stored in the fridge for up to 3 days.
