Instructions:
Rinse quinoa under cold water.
In a saucepan, bring chicken broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
Add diced chicken to the skillet, season with salt and pepper, and cook until browned.
Mix in cherry tomatoes and spinach, cook until spinach is wilted.
Combine cooked quinoa with the chicken mixture, stir well.
Serve warm and enjoy!
