Ingredients:  

Meatballs

  • 1 lb ground beef
  • 1/2 cup uncooked white rice
  • 1 egg beaten
  • 1/4 cup onion finely chopped
  • 1 tsp salt
  • 1/4 tsp black pepper

Sauce

  • 1 can tomato soup 10.75 oz can
  • 1 cup water

Instructions: 

  • In a large bowl, combine ground beef, rice, egg, onion, salt, and pepper. Mix well.
  • Shape the mixture into 1 1/2 inch meatballs.
  • In a large skillet, heat a small amount of oil over medium heat. Brown the meatballs on all sides.
  • In a bowl, combine tomato soup and water. Pour over the meatballs.
  • Reduce heat to low, cover, and simmer for 45 minutes, or until meatballs are cooked through and rice is tender.

Notes:

Serve with mashed potatoes or steamed vegetables.
