Instructions:
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
Season the chicken breasts with salt and pepper.
Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat with the breadcrumb mixture.
Heat olive oil in a skillet over medium heat. Cook the chicken breasts until golden brown and cooked through, about 3-4 minutes per side.
Drain on paper towels and serve hot.
Notes:
Serve with a side of lemon wedges and a simple arugula salad.
