Ingredients:  

Main Ingredients

  • 1 cup Rolled Oats
  • 1 cup Milk
  • 1 cup All-purpose Flour
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 Egg
  • 1/4 cup Vegetable Oil
  • 1 tsp Vanilla Extract

Instructions: 

  • Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  • In a bowl, combine the oats and milk. Let it sit for about 10 minutes.
  • In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  • Add the egg, oil, and vanilla extract to the oat mixture. Mix well.
  • Combine the wet and dry ingredients until just mixed. Do not overmix.
  • Divide the batter evenly among the muffin cups.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes:

These muffins can be stored in an airtight container for up to 3 days.
