Instructions:
1. In a large mixing bowl, combine the flour and water. Mix until no dry flour remains. Cover and let it rest for 30 minutes.
2. Add the sourdough starter and salt to the dough. Mix until well combined.
3. Perform a series of stretch and folds every 30 minutes for the next 2 hours.
4. Let the dough rise at room temperature for 4-6 hours, or until it has doubled in size.
5. Shape the dough into a round or oval loaf. Place it in a proofing basket or bowl lined with a floured cloth. Cover and refrigerate overnight.
6. Preheat your oven to 450°F (230°C) with a Dutch oven inside.
7. Carefully transfer the dough to the preheated Dutch oven. Score the top of the dough with a sharp knife.
8. Bake for 20 minutes with the lid on, then remove the lid and bake for another 25 minutes, or until the crust is golden brown.
9. Let the bread cool on a wire rack before slicing.
Notes:
Make sure your sourdough starter is active and bubbly before using it in this recipe.
