Ingredients:  

Main Ingredients

  • 500 g bread flour
  • 350 g water room temperature
  • 100 g sourdough starter active
  • 10 g salt

Instructions: 

  • 1. In a large mixing bowl, combine the flour and water. Mix until no dry flour remains. Cover and let it rest for 30 minutes.
  • 2. Add the sourdough starter and salt to the dough. Mix until well combined.
  • 3. Perform a series of stretch and folds every 30 minutes for the next 2 hours.
  • 4. Let the dough rise at room temperature for 4-6 hours, or until it has doubled in size.
  • 5. Shape the dough into a round or oval loaf. Place it in a proofing basket or bowl lined with a floured cloth. Cover and refrigerate overnight.
  • 6. Preheat your oven to 450°F (230°C) with a Dutch oven inside.
  • 7. Carefully transfer the dough to the preheated Dutch oven. Score the top of the dough with a sharp knife.
  • 8. Bake for 20 minutes with the lid on, then remove the lid and bake for another 25 minutes, or until the crust is golden brown.
  • 9. Let the bread cool on a wire rack before slicing.

Notes:

Make sure your sourdough starter is active and bubbly before using it in this recipe.
