Instructions:
1. Preheat your smoker to 250°F.
2. Cut the jalapeños in half lengthwise and remove the seeds and membranes.
3. In a bowl, mix the chopped brisket and cream cheese until well combined.
4. Stuff each jalapeño half with the brisket and cream cheese mixture.
5. Wrap each stuffed jalapeño with a slice of bacon and secure with a toothpick.
6. Place the wrapped jalapeños in the smoker and cook for about 1 hour, or until the bacon is crispy.
7. Brush the jalapeños with barbecue sauce during the last 10 minutes of cooking.
Notes:
For extra heat, leave some of the jalapeño seeds in the peppers.
