Instructions:
In a mixing bowl, combine the salmon, bread crumbs, green onions, egg, mayonnaise, lemon juice, Dijon mustard, salt, and pepper. Mix well.
Form the mixture into 8 patties.
Heat the olive oil in a frying pan over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown.
Serve hot with your favorite dipping sauce.
Notes:
These salmon cakes are great with a side salad or steamed vegetables.
