Ingredients:  

Main Ingredients

  • 14 oz canned salmon, drained and flaked
  • 1 cup bread crumbs
  • 1/4 cup chopped green onions
  • 1 egg, beaten
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions: 

  • In a mixing bowl, combine the salmon, bread crumbs, green onions, egg, mayonnaise, lemon juice, Dijon mustard, salt, and pepper. Mix well.
  • Form the mixture into 8 patties.
  • Heat the olive oil in a frying pan over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown.
  • Serve hot with your favorite dipping sauce.

Notes:

These salmon cakes are great with a side salad or steamed vegetables.
