Ingredients:  

Main Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 Carrots, sliced
  • 2 Celery Stalks, sliced
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 cup Green Beans, chopped
  • 1 cup Corn
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Thyme

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
  • 3. Stir in the garlic and cook for another minute.
  • 4. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  • 5. Add the green beans, corn, salt, pepper, and thyme. Reduce heat and simmer for 20 minutes.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add any other vegetables you like.
