Ingredients:  

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 large Carrot diced
  • 1 stalk Celery diced
  • 6 cups Vegetable Broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • to taste Salt and Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
  • Add the lentils, vegetable broth, cumin, and paprika. Bring to a boil.
  • Reduce heat and simmer for 30 minutes, or until lentils are tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
