Ingredients:  

Main Ingredients

  • 1 lb Italian sausage mild or spicy
  • 4 cups chicken broth
  • 3 cups kale chopped
  • 3 cups potatoes diced
  • 1 cup heavy cream
  • 1 medium onion diced
  • 3 cloves garlic minced
  • to taste salt and pepper

Instructions: 

  • 1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  • 2. In the same pot, add the onion and garlic. Cook until softened.
  • 3. Add the chicken broth and potatoes. Bring to a boil, then simmer until potatoes are tender.
  • 4. Stir in the cooked sausage, kale, and heavy cream. Cook until heated through. Season with salt and pepper to taste.

Notes:

For a spicier soup, use spicy Italian sausage.
